This week I decided to share what we made for dinner every night. I’m always looking for new ideas because we get sick of the same thing over and over again. I also keep ordering for new kitchen tools and equipments from Cream Charger World. I hope this helps give YOU some new ideas! These are all tried and true recipes in our house. I’m not a food blogger so my “recipes” are pretty basic and my pictures are probably not appetizing but hey. This is real life ish. Since we have a family of six, I need to make things that will feed us all, while also making sure my kids will actually EAT the food. These are all kid friendly. You can subtract or add ingredients based on your families likes.
MONDAY – STUFFED RICOTTA SHELLS
These are favorite in our house and they’re so easy to make! Serve with breadsticks or salad!
Ingredients
Jumbo Shells
15oz Ricotta Cheese
1 Cup Shredded Mozzarella Cheese
1/4 Cup Parmesan Cheese
1 Egg
7oz Canned Spinach
1 jar of your choice pasta sauce (I love Prego brand)
Directions
-Boil noodles
-Preheat oven to 400*
-Squeeze liquid out of spinach
-Combine spinach, ricotta, mozzarella, parmesan, egg, salt, pepper + mix
-Spray glass dish with cooking spray
-Stuff cheese mixture into the shells + place in glass dish
(I rinse the noodles in cold water so I don’t burn my hands off)
-Top with pasta sauce and more cheese
-Bake for 30 mins
TUESDAY – SAUSAGE & HASH BROWN CASSEROLE
This is from Magnolia Table– literally the BEST cookbook ever. The entire family devours this. Serve with a side of toast.
Ingredients
1 pound loose breakfast sausage
Olive oil as needed
1 small white onion
32 oz frozen diced hash browns
8 large eggs
1 cup heavy cream
1/2 cup milk
1 teaspoon garlic powder
1/2 teaspoon sweet paprika
Pinch of ground sage
1 teaspoon salt
1/2 teaspoon pepper
2 cups shredded sharp cheddar cheese
1/4 cup chives
Directions
-Preheat oven to 375* and spray glass baking dish
-Cook the ground sausage then transfer it to a plate
-Add some olive oil to pan. Sauté onion for 5 minutes and then stir in the hash browns. Cook until potatoes are tender
-In a large bowl, whisk together eggs, cream, milk, garlic powder, paprika, sage, salt and pepper. Whisk in cheese. Stir in the potatoes/sausage
-Pour mixture into glass baking dish
-Bake until the top is browned and the center is set (usually 40 minutes)
-Remove from oven and sprinkle chives on top
WEDNESDAY – TURKEY DOGS & FRENCH FRIES
This night was mine and Cody’s date night and we wouldn’t be eating dinner with the kids. I decided to make them some turkey dogs and fries because its easy. BUT when we usually have hot dog night we always do chili/cheese dogs and get the GOOD buns ;-).
THURSDAY – BUFFALO CHICKEN
We always have a chicken night every week. I switch up how I like to cook it – this time its baked with buffalo seasoning. We always switch up the sides too!
Side note: if you have a large family like I do, we like to buy the frozen bags of chicken. It’s cheaper and you get more!
We used:
-Buffalo Shake N Bake Seasoning
-Steamable Rice & Veggie Stir Fry
-Monterrey Cheddar Mashed Potatoes
(these are all just packaged items from the store, nothing made from scratch)
FRIDAY – WALKING TACOS
Who else loved this when they were in school?! Such a fun easy dinner. You can add whatever toppings you like to it.
Directions:
-We use ground turkey and season with taco seasoning
-Use whatever bags of chips you like! We had Fritos and Doritos
-Mix all toppings in the bag and eat with a fork!
-We added onions, sour cream, cheese, lettuce, + hot sauce
-For the toddlers, we dump everything on a plate since they don’t eat it out of the bag
SATURDAY – HOMEMADE PIZZA
This is one of my favorite pizza recipes because it’s Weight Watchers friendly (8 points for this entire pizza!) but still so good! This is a recipe for you’re own personal pizza. I usually make Cody and I our own, then the kids split one. Obviously, add whatever toppings you prefer!
Ingredients:
-1/2 cup self rising flour
-1/2 cup 0% plain greek yogurt
-1 cup fat free shredded mozzarella cheese
-1 cup pizza sauce
-turkey pepperoni
-banana peppers
Directions:
–FOR THE CRUST: mix together the flour and yogurt. It will be sticky so make sure to flour your hands and the counter! Roll out into a circle. Spray pizza pan with cooking spray then place on there
-Spread the pizza sauce, cheese and toppings on the pizza
-Bake at 400* until the crust is brown and cooked all the way through (usually 25 minutes)
SUNDAY – CROCKPOT CHEESY CHICKEN & RICE
I usually make multiple crockpot meals in a week but for some reason, that didn’t happen this week. I’ve been making this recipe since I first met Cody back in 2010 and we still love it! Serve with a side salad or any veggies!
Ingredients:
3 chicken breasts
1 onion
1 can cream of chicken
1 can of corn
Box of Zatarains yellow rice
1.5 cups shredded cheddar cheese
Directions:
-Place chicken in bottom of slow cooker
-Chop onion and toss in
-Put in cream of chicken
-Cover and cook for 7-8 hours on LOW or 3-4 hours on HIGH
-Shred chicken and put back into the slow cooker
-Cook rice according to package
-Put in corn, cooked rice, and cheese
-Stir until all heated
